SERVAGNIN
History:
Servagnin was first cultivated in the Morges region in 1420, making it the oldest Pinot Noir in Switzerland. With its unrivalled deliciousness, it is a wine to be tasted and embraced.
Description:
Servagnin is a powerful Pinot Noir with a deep colour. The nose has hints of brambles, undergrowth and red fruit. The palate is structured, full-bodied and supported by sapid acidity.
Viticulture:
The Servagnin vines are located on several terroirs in the Morges region.
The leaves are removed and the grapes harvested by hand.
Vinification:
The grapes are fermented in whole bunches for 6 days, followed by 6 days of fermentation in destemmed, unpressed grapes.
After pressing, the Servagnin is aged for 10 months in 500-litre barrels, followed by 6 months in tuns.
